On the Menu: Tandoori Chicken Burgers with Raita

“Mommy you’re are the best cooker in the world!”

That’s right…that’s what my daughter exclaimed during dinner today! It’s the first time I heard such words in more than 4 years!  Both my kids asked for thirds, with raita on the side and cleaned their entire plates.

I wanted to share this recipe with everyone, because this definitely doesn’t happen often. Unusually our mealtimes consists of my husband and I eating, while our kids run around the table entertaining themselves.   Dinners were much more civilized when it was just my daughter and us.  I wouldn’t even dream of what happens now. When my son arrived (or when he was capable of holding a fork), chaos was the name of the game at mealtimes.  By the time I get home from work, we’re so exhausted that there’s no energy left for discipline during meantime.  The only point that I did stick to was to resist being a short order cook—the kids have to eat what’s on the table.  So sometimes they eat it, sometimes, they choose not to….and today they did!

Here’s the recipe. I would’ve taken photos, if I knew that it would be such a hit. I plan to make it again next week, so I’ll definitely take some pics then.

Tandoori Chicken Burger with Raita

2             baby cucumbers
1 cup      plain yogurt
¼ cup      finely chopped mint
2            green onions, thinly sliced
¼ tsp      salt


¼ cup             tandoori curry paste
3 tbsp            yogurt
1/4 cup bread crumbs
500 g             ground chicken

Baby Potatoes with Parsley and Sea Salt

1 kg             baby potatoes
4 tsp            olive oil
½ tsp           sea salt
½ cup          chopped parsley

Preheat barbecue to medium. Cut cucumber into quarters, then thinly slice. Place in a bowl. Stir in yogurt, mint, onions and salt.

Whisk curry paste with yogurt and bread crumbs in a bowl.  Crumble in chicken. Gently mix. Shape into small burger patties.  Barbecue burgers with lid closed, until firm when pressed, 5 min per side.

Boil potatoes until tender, about 20 minutes. Drain and drizzle with olive oil. Smash very lightly with potato masher and sprinkle with sea salt. Stir in chopped parsley.

Serve burgers topped with raita and potatoes on the side.
